NORWALK, CT — A new mobile coffee business is set to launch in Norwalk over Memorial Day weekend, offering craft beverages and locally sourced pastries from a retrofitted vehicle.
Founded by East Norwalk resident Harrison Knowles, MANIFEST will begin service Friday, May 23, operating daily from 7 a.m. to 2 p.m. through Monday, May 26. The business will continue operating throughout the summer at various locations around the city.
To mark its debut, MANIFEST is organizing a scavenger hunt in partnership with local businesses. Clues to the mobile coffee unit’s location will be shared on the company’s Instagram account beginning Tuesday, May 20. The first three individuals to find and check in at the coffee truck will receive merchandise prizes.

“Whether it’s a perfectly poured cappuccino or a wild energy drink with your name on it, we’re here to serve Norwalk with intention and help build the future this city deserves,” Knowles said.
The menu will include classic espresso-based drinks, teas, and specialty beverages made with beans from Ilse, a roastery based in Canaan, Connecticut. The truck will also offer baked goods from Norwalk’s Wave Hill Breads.
In addition to food and drinks, MANIFEST aims to create a community-focused environment that encourages connection and local pride. The business plans to continue operating as a mobile unit until opening a permanent location in 2026.
